Pickle Relish
Put:
1 1/2 c diced English cucumbers
1/2 c diced onions
1/4 c diced red bell peppers
1 t salt
1 c water
in a bowl, stir & set aside for 1 hr.
(Salt reduces size of vegetables)
Then drain & put in a pot.
Add to the pot:
1 T dill
1 t celery seed
1 T honey
1/2 c lemon juice
& cook covered with the lid slightly ajar on med for 10 min.
Stir occasionally.
Let cool & use in the RecipeRICH recipes below or put in a bowl or jar.
Serve
or refrigerate in an airtight container for up to 3 days.
Freezes well, just stir after thawing.
