Kale Fennel Rice Bowl
Make:
(Can also use wild rice)
Simply Rice

(Can make the day before
& refrigerate for less sticky rice)
Put:
3 c diced kale
1/2 c diced onion
1 T fresh fennel
or 2 t ground fennel
1 c water
1/2 t salt
in a pot & cook on med for 20 - 60 min. (depending on how you like your kale)
Stir occasionally.
After the 20 - 60 min., add:
1 T honey
1 T lime juice
to the pot & cook for 2 min. more.
Stir occasionally.
Then add:
the Simply Rice
1/2 c sliced radishes
1/2 c sliced almonds
to the pot & stir.
Can add:
1/2 t virgin olive oil or coconut oil
to the pot & stir.
(Optional) Make: Pickles
(Can make the day before
& refrigerate overnight)
When serving, can add
4 - 5 Pickles
cut in 4ths for each person.
