Broccoli Rice Casserole
Make: Simply Rice

While the rice is cooking, you can make:
Cashew/Almond
Cheese Sauce
(with slivered almonds)
Then add to the Cheese Sauce:
1/2 c water
& stir or blend for 2 more sec.
Set aside.
Put:
1 c finely diced celery
1 t onion powder
1/4 t salt
2 t honey
1 1/2 c water
in a pan.
Cook with lid slightly ajar on med. heat for 15 min. stirring occasionally & set aside.
Make: Ranch Dressing
(with slivered almonds)
Pour the Ranch Dressing & the cooked celery with its remaining water in the Simply Rice.
Stir & set aside.
Preheat oven at 350º
Put in the bottom of a large casserole dish:
3 - 4 c fresh or frozen broccoli, thawed
1/4 t salt
1 t lemon or lime juice (optional)
& toss.
Pour 2/3 of the Cheese Sauce over the broccoli in the dish.
Then spoon the Simply Rice/Ranch Dressing mixture over the broccoli & smooth the mixture out with the back of a spoon.
Pour the other 1/3 Cheese Sauce on top.
Bake covered at 350º for 30 min.
Remove cover & then bake uncovered for 30 min. more.
Serve
or cool down & refrigerate in an airtight container for up to 3 days.
