Pitted Date Granola


(Can be made a day or more before.)
Preheat oven at 325º
Put:
3/4 c sliced ripe bananas
(or 1/2 c mashed)
1/3 c pitted dates
1/4 t coriander
or powdered vanilla
1 t salt
1/4 c almond or coconut butter
1/4 c pure maple syrup
& blend for 1 - 2 min.
(may need to pulse first)
Pour in a large bowl or mixer bowl.
Then add:
5 c rolled oats
1/4 c unsweetened
shredded coconut
1/2 c pecans, walnuts
and/or sliced or slivered almonds
(taste for freshness)
1 - 2 T sunflower
or pumpkin seeds (optional)
to the large bowl or mixer bowl & mix.
Pour the granola into a 9x13 glass pan.
Bake uncovered at 325º for 15 min.
Take out & toss the granola with a spatula.
Then continue baking at 325º for 10 min. more.
Take out & toss the granola with a spatula.
Then continue baking at 325º for 8 - 10 min. more.

Or cool down & store in an airtight container.
