For Peas Macaroni & Cheese Baked
Make: Cashew/Almond
Cheese Sauce

(use almonds with rice pasta
& cashews with all other pasta)
Pour the Cheese Sauce in a casserole dish.
Preheat oven at 350º
Add to the casserole dish:
3 c whole grain macaroni
(or whole grain pasta of your choice)
1 c frozen peas, (thawed in water)
1/2 t salt
(or 1 t salt for whole wheat pasta)
3 1/2 c water
(or 4 1/2 c water for whole wheat pasta)
& stir.

For Macaroni & Cheese Baked
Follow the Peas Macaroni & Cheese Baked recipe but leave out:
the 1 c frozen peas
And instead of 3 1/2 c water use:
3 c water
(or 4 c water for whole wheat pasta)
with roasted red peppers & rice pasta
with fresh red peppers & whole wheat pasta
Bake covered at 350º for 30 min.
Take out & stir.
Continue baking with lid slightly ajar for 15 min. more. (will thicken up as it cools down)
Serve
or cool down & refrigerate in an airtight container for up to 3 days.
Can freeze, but will need to be thawed, then put in a pot with a little water & heat on med. high while stirring for 3 - 5 min.
