Thyme Cream of Broccoli
Thyme Cream of Broccoli

(Broccoli)
Put:
7 c diced fresh or frozen broccoli
1 c diced sweet onion
2 minced garlic cloves
3 bay leaves
2 t salt
3 c water
in a large pot & bring to boil.

Reduce heat, cover with lid slightly ajar on med. for 10 min.
Stir occasionally.

Unblended Broccoli)
Put:
1 c of the Broccoli & the bay leaves
in a bowl & set aside to add back later.

Put:
the rest
of the Broccoli & liquid
in a blender & blend for 1 min.
(let cool 20 min. before blending if you have a plastic blender)
Put back in the large pot.

Then put:
3/4 c cashews
1 c water
in a blender & blend for 1 - 2 min.
& pour in the large pot.

Add to the large pot:
2 t basil
1/2 t thyme
the Unblended Broccoli

Cook on med. for 5 min.
Stir frequently.

Can add:
1 - 2 t virgin coconut oil or olive oil
& stir.

Discard bay leaves & serve
or cool down & refrigerate in an airtight container for up to 3 days.

Can freeze, but will need to be thawed, then put in a pot with a little water & heat on med. high while stirring for 3 - 5 min.
