Sweet Onion Cream of Broccoli
Put:
7 c diced broccoli florets
3 c finely diced russet, yellow,
or red skin potatoes
1 c diced sweet onions
2 minced garlic cloves
3 bay leaves
2 t celery flakes
2 t parsley
3 t salt
6 c water
in a large pot & bring to boil.
Reduce heat, cover with lid slightly ajar on med. for 30 - 40 min.
Stir occasionally.
Discard bay leaves.
Put:
4 c of the broccoli mixture
in a blender & blend for 7-10 sec.
Then pour back into the pot & stir.
Serve
or cool down & refrigerate in an airtight container for up to 3 days.
