Sweet Greek Salad
(Salad)
Put:
5 - 7 c romaine lettuce
1 1/2 c diced cucumber
1 1/2 c diced tomatoes
1/2 c diced red, orange,
or yellow bell pepper
1/4 - 1/2 c diced red onion
in the large bowl & toss.
(Dressing)
Put in a blender:
2/3 c cashews
1/2 t basil
1/2 t oregano
1/2 t marjoram
1/2 t Italian seasoning
1/2 t onion powder
1 1/4 t salt
2 T lemon juice
1 T pure maple syrup
1/3 c water
& blend for 1 - 2 min.
Then put in the blender:
1/2 t dill
& stir with a spoon or blend for 3 sec.
If you do not want the lemon juice to wilt the lettuce, then wait until ready to serve to pour the Dressing into the large Salad bowl & toss.

Can refrigerate the Salad & Dressing separately, if you like, until serving.
Can serve plain or add:
1/2 - 1 c shelled pistachios
(depending on how much you like)
or 1/4 c sunflower or pumpkin seeds
to the large Salad bowl & toss.
