Rosemary Potatoes
Preheat oven at 350º
Put:
7 c diced yellow potatoes
1 minced garlic clove
3/4 t whole or ground rosemary
1 1/2 t salt
1 c water
in a casserole dish & stir.
Bake covered at 350º for 1 hr.
After the 1 hr., add:
1 t virgin coconut oil
to the casserole dish & toss lightly.
Serve
or cool down & refrigerate in an airtight container for up to 3 days.
