Loaded Corn & Black Bean Pizza
Make:
Large Pie Crust

Loosen the pizza crust from the cookie sheet by going around the cookie sheet with a sharp knife between the cookie sheet & the crust.
(Tomato Sauce)
Put:
2 c diced fresh tomatoes
1/3 c tomato paste (1/2 of a 6 oz can)
1 1/4 t basil
3/4 t onion powder
3/4 t garlic powder
1/2 t oregano
1/2 t salt
1/2 T lemon
1 1/2 T honey
in a pot.
Cook on med. heat until boiling,
then reduce heat & simmer for 10 min.
Stir occasionally.
Make: White Cheese Sauce
Preheat oven to 450º
Layer on the pizza crust:
the Tomato Sauce, spread on
the White Cheese Sauce, drizzled on with a spoon
3/4 c rinsed black beans, canned or homemade
1/2 c fresh or frozen corn, thawed
1/2 c diced yellow or red onions
1/4 c sliced red bell peppers
& bake at 450º for 35 - 45 min. until crust turns golden brown.
Loosen with a knife around the edges & cut into rectangles.
Serve
or cool down & refrigerate in an airtight container for up to 3 days
or freeze.
