Loaded Corn & Black Bean Pizza


Make:
Large Pie Crust

Loosen the pizza crust from the cookie sheet by going around the cookie sheet with a sharp knife between the cookie sheet & the crust.
(Tomato Sauce)
Put:
2 c diced canned tomatoes
1/4 c tomato paste
1/2 t onion powder
1/4 t garlic powder
1/4 t basil
1/4 t oregano
1/2 t salt
1 t lemon juice
1/2 T honey
1/4 c water
in a pot.
Bring to boiling, then reduce heat & simmer with lid slightly ajar for 10 min.
Stir occasionally.
Make: White Cheese Sauce

Preheat oven to 450º
Layer on the pizza crust:
the Tomato Sauce (spread on)
the White Cheese Sauce (drizzled on with a spoon)
1 1/2 c rinsed black beans, canned or homemade
1 c fresh or frozen corn, thawed
1/3 - 1/2 c diced yellow onions
1/2 c sliced red bell peppers
& bake at 450º for 45 min. until crust turns golden brown.
Loosen with a knife around the edges & cut into rectangles.
Serve
or cool down & refrigerate in an airtight container for up to 3 days
or freeze.
