Grilled Red Bell Peppers & Onions
Slice:
2 c red onions
Then make 1 cut from center to outside so that the onion will bend out when cooking to make long strips.
Put:
the 2 c sliced & cut red onions
2 c sliced red bell peppers
(or red & green bell pepper mix)
2 t paprika
1 t cumin
1 t oregano
1/2 t garlic powder
1/2 t onion powder
1 t salt
1 c water
in a pot or pan.
Cook uncovered on med. 30 - 35 min.
Stir occasionally.
After the 30 - 35 min., can add:
1/2 t virgin olive oil
to the pot or pan and stir.
Serve
or cool down & refrigerate in an airtight container for up to 3 days
or freeze.
