French Fries / Okra Fries


(Dry Herbs)
Put:
1 1/2 t onion powder
1/2 t garlic powder
2 t basil
1/2 t paprika
3 - 4 t salt
in a small bowl.
OR
3 - 4 t salt
for plain fries.
Stir & set aside.
To keep from sticking,
oil sides & bottoms of 2 or 3 glass pans or cookie sheets with:
1/2 t virgin coconut or olive oil
Sprinkle:
2-3 T shredded coconut or flakes
in the glass pans or cookie sheets.
Set aside.
Put:
8 c potatoes or sweet potatoes
(sliced like French fries)
OR
8 c sliced okra
in a large bowl & dry with paper towels.
Sprinkle:
the Dry Herbs or salt
over the potatoes or okra in the large bowl & toss for about 20 sec. to cover them.
Place the potatoes or okra on top of the shredded coconut or flakes in the glass pans or cookie sheets.
Bake at 350º for 45-50 min. until soft.
Or to speed up the cooking time,
450º for about 20 -35 min. until soft.
(depends on thickness of slices)
