Sort & rinse:
2 1/2 c navy beans

Put the beans in a bowl & add:
water
to cover them by 2" - 3"
& let soak for at least 7 hrs.,
or overnight.

In the morning,
rinse the soaked beans & drain.

Stovetop or Oven cooking options below:

(Stovetop)
After draining, put the beans in a large pot.

Cover the beans with:
1 1/2" of water
above the beans & bring to a gentle boil.
Reduce heat & simmer uncovered for 1 - 1 1/2 hrs. or more,
depending on the freshness of the beans, until beans mash easily.

Stir occasionally, adding water if beans get too dry.

After the beans are soft, add to the large pot:
3/4 c of the Ketchup
1 1/2 c diced white onions
5 minced garlic cloves
2 t diced fresh ginger root

(powdered will not taste
like baked beans)
1/2 t coriander
2 t salt
3 T lemon juice
1/4 c pure maple syrup
1/4 c honey

Simmer with the lid still slightly ajar for 45 min. or more.

Stir occasionally.

After cooking, can add at the end:
1 t virgin olive oil
to the pot & stir.

Serve
or cool down & refrigerate in an airtight container for up to 3 days.

Can freeze, but will need to be thawed, then put in a pot with a little water & heat on med. high while stirring for 3 - 5 min.

(Oven)
After draining, put the beans in a casserole dish.
Preheat oven at 400º

Cover the beans with:
1 1/2" of water
above the beans.

Bake uncovered at 400º for 3 - 4 hrs., depending on the freshness of the beans, until beans mash easily.

If the beans need more water, always add boiling water when cooking in an oven, so the dish does not crack.

After the beans are soft, add the 1st 2 ingredients (Ketchup & onions) a little at a time & stir between each one, then add the last 7 ingredients:
3/4 c of the Ketchup
1 1/2 c diced white onions

Continue baking with the lid still slightly ajar at 350º for 1 hr.

After baking, can add at the end:
